Chickens have a lot of down and short feathers. I don't think they'd be long enough to work for Celestia's wings. When I see a pegasus, (or alicorn in this case), spread their wings, I don't think chicken feathers. I think of much bigger birds.
Further, it poses a potential allergy for some people, and possibly even health hazards. For this reason, I think it's better to go synthetic. (Perhaps this was the intention, and I misinterpreted the screens there...)
Also horse's flanks are very very muscular. And muscles do not feel like the stuff they put in breast implants. Especially muscles that are flexing. And that's exactly what her leg muscles would be doing if she were standing.
Try it yourself: feel your leg muscles when they are doing no work whatsoever. Then put some weight on a leg and feel the difference. Now, have you ever seen a physically active fat person's lower leg muscles? They tend to be quite strong, the reason being that they have to carry all that weight around. Now picture a 900+ pound horse. And horses are pretty goddamned strong besides that.
Something else to consider, her prosthetic genitals would most likely be out of reach for users. So attention should be paid to height. I understand realism is cool and all, but 'I WANT TO PUT MY DICK IN THIS HORSE' remains the primary goal, doesn't it? I'm not into the bestiality scene myself, so I dunno - maybe the height difficulty part of the draw for some people.
