I think rather than something quite that esoteric it would have been cool to see ponies move and express emotions more like a horse does, including herding up when things look bad (instead of running around in lots of different directions), pony facial expressions and ears etc. how certain postures show submission, how an extremely high head is alertness, fear, and confusion. etc

They DO have to lie down fully to achieve REM sleep, which they do in the wild by rotating sleeping / awake members of the herd, just like geese also do, and any other number of herd / flock animals.Ponies in Equestria are apex creatures. They are not in danger of constantly being prey. Thus, while they still CAN sleep standing up (see today's episode, in fact), they are not required to, so they can choose to sleep in a fashion that allows REM activity and is much more comfortable.
